I LOVE soup. And when it comes to a creamy bowl filled with beautiful vegetables, I am a little obsessed.

Carrots, butternut squash, apples, beets, kale, and cauliflower each bring something different to the pot. Some are sweet and earthy. Others are fresh and savory. With a few simple ingredients, they become the kind of meal that makes me want to slow down, sit down, and enjoy every spoonful.

My favorite way to make them creamy is, as you can imagine, natural and healing with some full-fat coconut milk and potatoes! Coconut milk brings richness, while potatoes give the soup body and that lovely, velvety texture. Together, they make a simple pot of vegetables look extra pretty AND feel extra comforting.

When I say “healing soups,” I mean food that feels nourishing and comforting—a small act of LOVING care in the middle of an ordinary day. For me, the warmth, the colors, and the act of making something with intention are part of what makes soup so special.

These five plant-based recipes bring together the flavors I love. There is a carrot and ginger soup, a butternut squash and apple soup, a vibrant beet soup, a creamy kale and potato soup, and a cauliflower soup with roasted garlic.

My secret to creamy vegetable soup

Use unsweetened, full-fat canned coconut milk, rather than the thinner coconut beverage sold in cartons. Stir the can well before measuring so the cream and liquid are combined.

For potatoes, I like Yukon Golds here. Peel and cut them into small, even pieces so they cook at the same pace as the other vegetables. Once everything is tender, blend just until smooth. Too much blending can make potato-based soups gluey.

Start with the broth listed in each recipe, then add a little more after blending if you prefer a thinner soup. Finish with lemon, lime, or apple cider vinegar: a small splash of acidity helps balance the sweetness of the vegetables and the richness of the coconut milk.

A note on the recipes: These are newly developed recipes and have not been kitchen-tested. Times and yields are estimates; let tenderness and taste guide your final adjustments. Each makes about four servings.

Recipe 3

Creamy Beet Coconut Soup

This soup is all about that gorgeous color. Beets bring an earthy sweetness, coconut milk softens the flavor, and lemon brightens each spoonful.

Cook

Serves
4

Ingredients

  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 2 garlic cloves, minced
  • 1 teaspoon grated fresh ginger
  • 1¼ pounds raw beets, peeled and cut into ½-inch cubes
  • 1 medium Yukon Gold potato, about 6 ounces, peeled and diced
  • 3½ cups vegetable broth, plus more as needed
  • ½ teaspoon fine salt, plus more to taste
  • ¼ teaspoon black pepper
  • ¾ cup unsweetened full-fat canned coconut milk
  • 1 tablespoon lemon juice, plus more to taste
  • Optional toppings: fresh dill, chopped chives, coconut milk swirl

Method

  1. Warm the oil in a large pot over medium heat. Cook the onion for 5–7 minutes, until softened.
  2. Add the garlic and ginger. Stir for 1 minute.
  3. Add the beets, potato, broth, salt, and pepper. Bring to a boil, reduce the heat, and partially cover.
  4. Simmer for 30–40 minutes, or longer if needed, until the beets are completely tender when pierced with a fork.
  5. Add the coconut milk and blend just until smooth. Add more broth if needed, then warm gently.
  6. Stir in the lemon juice and adjust the seasoning. Finish with dill or chives.

Kitchen tip: Cut the beets small and evenly. They take longer to soften than the potatoes, and fully tender beets make a smoother soup.

Recipe 4

Creamy Kale and Potato Soup

This is the savory green bowl in the collection. Potatoes create the creamy base, and kale goes in toward the end so it keeps more of its color and fresh flavor.

Prep

Cook
30 minutes
Serves
4

Ingredients

  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 1 pound Yukon Gold potatoes, peeled and cut into ½-inch cubes
  • 3½ cups vegetable broth, plus more as needed
  • ½ teaspoon dried thyme
  • ½ teaspoon fine salt, plus more to taste
  • ¼ teaspoon black pepper
  • 4 packed cups chopped kale, tough stems removed, about 4 ounces prepared leaves
  • ¾ cup unsweetened full-fat canned coconut milk
  • 1 tablespoon lemon juice, plus more to taste
  • Optional toppings: chopped parsley, toasted pumpkin seeds, red pepper flakes

Method

  1. Warm the oil in a large pot over medium heat. Cook the onion for 5–7 minutes, until softened. Add the garlic and cook for 1 minute.
  2. Add the potatoes, broth, thyme, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 15–20 minutes, until the potatoes are tender.
  3. Stir in the kale and cook for 5–7 minutes, until tender.
  4. Add the coconut milk. Blend just until creamy, or leave some texture if you prefer. Add broth to adjust the consistency.
  5. Warm gently, stir in the lemon juice, and adjust the seasoning. Finish with your chosen toppings.

Make it heartier: Add one drained and rinsed 15-ounce can of white beans with the kale. Add a little extra broth as needed.

Recipe 5

Cauliflower Soup with Roasted Garlic

Cauliflower makes a wonderfully mellow soup, and roasted garlic adds a sweet, savory depth. A little potato and coconut milk bring everything together.

Prep
15 minutes
Cook
50 minutes, with overlapping steps
Serves
4

Ingredients

  • 1 whole head garlic
  • 1 tablespoon plus 1 teaspoon olive oil, divided
  • 1 medium yellow onion, diced
  • 1 large cauliflower, trimmed and cut into small florets, about 1½ pounds prepared
  • 1 medium Yukon Gold potato, about 6 ounces, peeled and diced
  • 3 cups vegetable broth, plus more as needed
  • ½ teaspoon dried thyme
  • ½ teaspoon fine salt, plus more to taste
  • ¼ teaspoon black pepper
  • ¾ cup unsweetened full-fat canned coconut milk
  • 1 tablespoon lemon juice, plus more to taste
  • Optional toppings: chopped chives, toasted pumpkin seeds, cracked black pepper

Method

  1. Heat the oven to 400°F. Slice the top off the garlic head to expose the cloves. Drizzle with 1 teaspoon oil, wrap in foil, and roast for 35–45 minutes, until soft. Let cool enough to handle.
  2. While the garlic roasts, warm the remaining tablespoon oil in a large pot over medium heat. Cook the onion for 5–7 minutes, until softened.
  3. Add the cauliflower, potato, broth, thyme, salt, and pepper. Bring to a boil, reduce the heat, and partially cover. Simmer for 20–25 minutes, until very tender.
  4. Squeeze the roasted garlic cloves out of their skins and into the pot. Add the coconut milk.
  5. Blend just until smooth, adding broth as needed. Warm gently, then stir in the lemon juice and adjust the seasoning.
  6. Serve with chives, toasted seeds, or a little cracked black pepper.

A few finishing touches

For any of these soups, reserve a spoonful of coconut milk for a swirl on top. Fresh herbs add brightness, and toasted seeds bring a lovely crunch. A slice of crusty bread makes a wonderful companion.

An immersion blender makes blending easy right in the pot. If using a countertop blender, follow its instructions for hot liquids, work in small batches, and allow steam to escape safely. Never blend hot soup in a sealed personal blender.

What I love most about these soups is how a few familiar ingredients can become something so comforting. A handful of vegetables, a potato, a splash of coconut milk—and suddenly there is a warm bowl waiting for you.

That is my kind of care. And yes, I will happily go back for another spoonful.
